20 minutes · Serves 4

Ingredients for Buttered Garlic Shrimp

  • 500 g medium shrimp, shell-on, whiskers trimmed and deveined
  • 1/2 cup lemon-lime soda
  • 1/4 cup butter
  • 1 head garlic (about 10 cloves), minced
  • 1 tablespoon calamansi or lemon juice
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon chopped parsley or spring onion

How to cook Buttered Garlic Shrimp

  1. 1.Soak the shrimp in the lemon-lime soda for 10 minutes, then drain and reserve 1/4 cup of the soda.
  2. 2.Melt the butter in a wide pan over medium-low heat. Add the garlic and cook gently for 2 to 3 minutes, stirring, until light golden and fragrant; do not let it burn.
  3. 3.Raise the heat to medium-high and add the shrimp in a single layer. Cook for about 1 minute per side until they turn orange.
  4. 4.Pour in the reserved soda and the calamansi juice. Simmer for 2 to 3 minutes until the sauce reduces and coats the shrimp and the shrimp are opaque all the way through.
  5. 5.Season with the salt and pepper, sprinkle with parsley and serve immediately with steamed rice.
