Leche flan

What you need for Leche flan

• ¾ cup sugar for caramel
• 10 egg yolks
• 1 can condensed milk (about 300 ml)
• 1 can evaporated milk (about 370 ml)
• 1 tsp vanilla extract

1. 1Melt the sugar in a small pan over medium heat until amber. Pour into a heatproof flan mold and swirl to coat the base.
2. 2Gently whisk the egg yolks, condensed milk, evaporated milk, and vanilla. Strain into the caramel-lined mold.
3. 3Cover the mold with foil. Steam over low heat for 30–40 minutes, until the center is just set.
4. 4Cool completely, then chill for at least 4 hours. Loosen the edges and invert onto a plate.
