Tokwa at Baboy Humba (Pork Humba with Tofu)
Tokwa at Baboy Humba braises pork belly in pineapple, soy, and salted black beans before adding crisp tofu.

Ingredients for Tokwa at Baboy Humba (Pork Humba with Tofu)
- 1 1/2 lb pork belly, cubed
- 1 cup pineapple juice
- 10 oz extra-firm tofu, cubed
- 1/4 cup soy sauce
- 2 tbsp white vinegar
- 6 tbsp brown sugar
- 4 tbsp salted black beans
- 1 onion, chopped
- 6 garlic cloves, crushed and chopped
- 1 star anise
- 1 cup water
- 1/4 tsp ground black pepper
- 1 1/2 cups cooking oil
How to cook Tokwa at Baboy Humba (Pork Humba with Tofu)
- 1.Heat oil in a wok and deep-fry tofu until golden and crisp. Remove and set aside.
- 2.Transfer 3 tbsp frying oil to a clean pan. Sauté garlic until browning, add onion, then cook pork until lightly browned.
- 3.Add soy sauce and cook until reduced by half. Add pineapple juice and vinegar, cover, and bring to a boil.
- 4.Stir in salted black beans. Cover and cook over low-medium heat for 35 minutes.
- 5.Add water and brown sugar; cover and simmer over low heat about 40 minutes until pork is very tender. Add star anise for 5 minutes, then discard it.
- 6.Season with pepper, fold in fried tofu, and cook 2 minutes before serving.
