Snapper in Mango Sauce
Crisp red snapper becomes a bright centerpiece beneath a sweet-tart mango sauce.

Ingredients for Snapper in Mango Sauce
- 1 large whole red snapper, cleaned, gutted, and scored
- Salt, to taste
- Freshly ground black pepper, to taste
- Oil, for deep-frying
- 1 mango, cubed
- 3 tbsp mango jam
- Juice of 1/2 lemon
- 1 tbsp sugar
- 1 tbsp cornstarch
- 1/3 cup water
- 1 shallot, finely chopped
- 3 cloves garlic, minced
- Spring onions, chopped, for garnish
How to cook Snapper in Mango Sauce
- 1.Season snapper inside and out with salt and black pepper.
- 2.Heat enough oil for deep-frying in a wok; fry fish until golden outside and cooked through, then drain.
- 3.Carefully drain wok, leaving 2 tablespoons oil. Sauté garlic and shallot until fragrant.
- 4.Whisk mango jam, lemon juice, sugar, cornstarch, and water; pour into wok and bring to a boil.
- 5.Add mango and simmer 1 minute. Pour sauce over fish, garnish with spring onions, and serve.
