Silvanas are chilled cashew meringue sandwiches layered with silky buttercream and crumb coating.

Ingredients for Silvanas
5 large egg whites, room temperature
1 cup ground salted cashews
1/2 tsp cream of tartar
1/2 cup granulated sugar
5 large egg yolks, chilled
225 g butter, cubed and softened
1/3 cup granulated sugar
2 tsp vanilla extract
1/4 tsp salt
1 cup ground graham crackers
1/2 cup ground cashews
How to cook Silvanas
1.Draw thirty 10 x 7 cm ovals on baking paper, flip ink-side down on trays, and heat oven to 145°C.
2.Whip egg whites to foam; add cream of tartar, then gradually beat in 1/2 cup sugar until stiff, glossy peaks form. Fold in salted cashews.
3.Pipe meringue into ovals and smooth tops. Bake 20 minutes until lightly browned; switch off oven and leave cookies inside 10 minutes, then cool.
4.Whisk yolks, 1/3 cup sugar, vanilla, and salt over simmering water to 68°C. Cool over cold water, whip 8 minutes, then beat in softened butter gradually.
5.Mix graham crackers and cashews. Sandwich three meringues with buttercream, coat the outside, roll in crumbs, and chill before serving.
