Tinumtuman
Tinumtuman is a creamy coconut stew of bamboo shoots and clams with a gentle chile warmth.

Ingredients for Tinumtuman
- 2 cups thinly sliced bamboo shoots
- 1 1/2 cups coconut milk
- 1/2 cup coconut cream
- 1 cup shelled clams, steamed in 1 cup water, liquid reserved
- 3 red chiles, finely chopped
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 tbsp minced ginger
- Fish sauce
- Freshly ground black pepper
- Oil
How to cook Tinumtuman
- 1.If using non-fresh bamboo shoots, boil them in water for 30 minutes until tender; drain, cool, and squeeze dry.
- 2.Heat oil in a wok and sauté garlic, ginger, chiles, and onion until fragrant.
- 3.Add bamboo shoots, coconut milk, and reserved clam liquid; boil, then simmer over medium heat for 30 minutes until reduced.
- 4.Stir in coconut cream and clams, season with fish sauce and pepper, and simmer 5 minutes.
- 5.Serve hot with steamed rice.
