Beef Lauya
Beef Lauya is a comforting clear beef soup with ginger, leafy vegetables, and crispy fried shallots.

Ingredients for Beef Lauya
- 1 1/2–2 kg stewing beef, beef ribs, oxtail, or neck bones
- 1/2 small Chinese cabbage, sliced
- 1 bunch bok choy, trimmed
- 2 thumb-size pieces ginger, thinly sliced
- 1 large white onion, sliced
- 1 teaspoon whole black peppercorns
- 2 spring onion stalks, chopped
- 1/2 cup crispy fried shallots, plus more for garnish
- Fish sauce, to taste
- Water, as needed
How to cook Beef Lauya
- 1.Cover beef with water in a pot, bring to a boil, and boil 5 minutes until scum rises.
- 2.Drain and rinse beef and pot thoroughly. Return beef to the clean pot with ginger, onion, peppercorns, fried shallots, and fish sauce.
- 3.Cover with water, bring to a boil, then simmer 1 1/2–2 hours until the meat is very tender.
- 4.Add Chinese cabbage and bok choy, adjust fish sauce, and cook 5 minutes until vegetables are tender but still crisp.
- 5.Serve topped with extra crispy fried shallots and spring onions.
