Bulalo Kare-kare
Bulalo Kare-kare pairs tender beef shank with peanut-thickened annatto sauce and fresh vegetables.

Ingredients for Bulalo Kare-kare
- 3 pounds beef shank (bulalo)
- 1 Knorr Beef Cube
- 1 cup roasted peanuts
- 15 sitaw, cut into 2-inch pieces
- 1 Chinese eggplant, sliced
- 1 bunch bok choy
- 1/2 cup annatto seeds
- 8 cloves garlic, crushed and chopped
- 1 1/2 pints water
- 2 teaspoons cornstarch mixed with 1/4 cup water
- Ground black pepper, to taste
- 1/2 cup bagoong alamang
- 3 tablespoons cooking oil
How to cook Bulalo Kare-kare
- 1.Heat oil in a pot, sauté garlic until fragrant, then sear beef shank for 30 seconds per side.
- 2.Add water, boil 10 minutes while skimming, then cover and simmer on low until beef is tender.
- 3.Boil annatto seeds in 1 cup water for 1 minute; strain, and blend roasted peanuts into a smooth paste.
- 4.Stir peanut paste and annatto water into tender beef; cover 5 minutes, then add Beef Cube and cook 3 minutes.
- 5.Stir in cornstarch slurry until thickened, season with pepper, then cook eggplant and sitaw covered for 5 minutes.
- 6.Add bok choy, cover 3 minutes, and serve with bagoong alamang.
