Excursion Chicken and Pork Adobo
This excursion-style adobo braises chicken and pork belly until tender, then reduces the vinegar sauce.

Ingredients for Excursion Chicken and Pork Adobo
- 3 lb pork belly, cut into large cubes
- 2 lb chicken, cut into serving pieces
- 1/4 cup coconut vinegar
- 8 to 10 tbsp soy sauce
- 1 head garlic, crushed
- 1 tsp whole peppercorns
- 4 cups water
- 1 beef cube or beef bouillon cube
- 6 dried bay leaves
- 3 tbsp cooking oil
- Salt, to taste
How to cook Excursion Chicken and Pork Adobo
- 1.Mix soy sauce, garlic, peppercorns, and bay leaves. Add pork and chicken, toss well, cover, and refrigerate at least 3 hours or overnight.
- 2.Heat oil in a wide pan. Add meat with its marinade and cook 10–12 minutes until browned.
- 3.Add water, bring to a boil, stir in beef cube, cover, and simmer on low about 60 minutes until very tender.
- 4.Add coconut vinegar, bring back to a boil, and cook until the liquid nearly evaporates.
- 5.Taste, adjust salt and pepper if needed, and serve.
