Bringhe
Yellow coconut rice dish filled with chicken, chorizo, and toppings.

Ingredients for Bringhe
- 500 g boneless chicken thigh meat, cubed
- 1 chorizo, sliced
- 1/2 red bell pepper, sliced into strips
- 1/2 cup frozen green peas
- 1/4 cup raisins
- 1 cup glutinous rice, rinsed
- 1 cup jasmine rice, rinsed
- 2 cups coconut milk
- 2 cups chicken broth
- 2 tsp turmeric powder
- 1 onion, finely chopped
- 4 cloves garlic, minced
- Fish sauce and freshly ground black pepper, to taste
- Quartered hard-boiled eggs, for garnish
- Oil
How to cook Bringhe
- 1.Heat oil in a wide pan over medium heat; cook the chorizo for 2 minutes and set aside.
- 2.Season the chicken with salt and pepper, cook for 3 minutes per side, and set aside.
- 3.Add oil if needed; sauté the garlic and onion until translucent.
- 4.Mix in both rices and turmeric, stirring over medium heat for 1 minute.
- 5.Pour in the coconut milk and broth. Arrange the chicken, chorizo, bell pepper, peas, and raisins on top; season and cover.
- 6.Cook for 15-20 minutes until the liquid is absorbed and the rice is cooked. Remove from the heat, top with eggs, and serve.
