Lengua Estofado

Tender beef lengua is pan-fried and simmered in a tangy, olive-studded tomato sauce.

Ingredients for Lengua Estofado

  • 2 lb cooked beef lengua, tender and sliced
  • 1/2 cup all-purpose flour
  • 1 (14 oz) can diced tomatoes
  • 2 tsp beef bouillon
  • 3/4 cup white wine
  • 1 medium yellow onion, minced
  • 3 cloves garlic, crushed and minced
  • 2 tbsp brown sugar
  • 2 tbsp soy sauce
  • 1 tbsp vinegar
  • 5 bay leaves
  • 1/2 cup button mushrooms, sliced
  • 1 cup pitted green olives
  • 1/4 cup black olives, sliced
  • 1 cup water
  • Salt and ground black pepper, to taste
  • 1/4 cup cooking oil

How to cook Lengua Estofado

  1. 1.Heat oil in a wide pot over medium heat. Dredge lengua in flour, shake off excess, and fry about 1 minute per side; set aside.
  2. 2.Sauté onion and garlic in the same pot until soft. Add tomatoes and wine, then simmer 2 minutes.
  3. 3.Return lengua to the pot. Add soy sauce, water, and bouillon; bring to a boil.
  4. 4.Add bay leaves, cover, and cook over low heat until the sauce reduces by about half.
  5. 5.Add vinegar and bring the sauce back to a boil. Stir in sugar, olives, and mushrooms; cook 5 to 8 minutes.
  6. 6.Season with salt and pepper, then serve warm.
