Bulalo Mami
Bulalo Mami is a deeply beefy noodle soup with corn, greens, and tender shank.

Ingredients for Bulalo Mami
- 2 beef leg bones, each cut into 3–4 pieces
- 1.5 kg beef shanks
- 1 tbsp black peppercorns
- 2 large red onions, quartered
- 2 large corn, each cut into 5 pieces
- 5 spring onion stalks, chopped
- Leafy vegetables such as bok choy or cabbage
- Water
- Sea salt and/or fish sauce, to taste
- Fine egg noodles
- Chopped spring onions, for garnish
- Crispy fried shallots, for garnish
How to cook Bulalo Mami
- 1.Cover bones, onions, and peppercorns with water; boil, then simmer for 2 1/2 hours.
- 2.Strain broth, chill until fat solidifies, then lift off and discard the fat.
- 3.Return clear broth, bones, and shanks to a pot; boil, skim, then simmer 30 minutes.
- 4.Add corn and simmer 1 hour, until beef is tender; add leafy vegetables for the final 3 minutes.
- 5.Season with salt or fish sauce and pepper. Cook noodles separately, then bowl with beef, vegetables, broth, spring onion, and fried shallots.
