Ingredients for Pininyahang Baboy sa Gata (Pineapple Pork with Coconut Milk)
- 2 1/2 lbs pork belly, cubed
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 20 oz canned pineapple chunks with juice
- 1 carrot, cubed
- 4 cloves garlic, chopped
- 1 onion, chopped
- 2 cups coconut milk
- 1 cup water, as needed
- 3 tbsp cooking oil
- Salt and fish sauce, to taste
How to cook Pininyahang Baboy sa Gata (Pineapple Pork with Coconut Milk)
- 1.Heat oil in a pan and sauté garlic and onion until the onion softens.
- 2.Add pork and sauté until light brown.
- 3.Add pineapple juice, half the pineapple chunks, and coconut milk. Cover and simmer on low until pork is tender, adding water if needed.
- 4.Add carrot and remaining pineapple; cook 7 minutes. Add bell peppers and cook 5 minutes.
- 5.Season with salt and fish sauce, then serve warm with rice.
