Crispy Adobo

Crispy adobo gives tender pork belly a final high-heat fry and a shower of toasted garlic.

Ingredients for Crispy Adobo

  • 1 kilogram pork belly, cubed
  • 1 whole garlic, minced
  • 1/2 cup vinegar
  • 1/2 cup Philippine soy sauce or Kikkoman soy sauce
  • 1 tablespoon sugar
  • Oil, as needed
  • Bay leaves
  • Whole peppercorns
  • Water, as needed

How to cook Crispy Adobo

  1. 1.Sauté garlic in oil over low heat until golden; remove and reserve.
  2. 2.Brown pork belly in the same skillet over medium-high heat.
  3. 3.Add 1/2 cup water, vinegar, soy sauce, sugar, bay leaves, and peppercorns. Boil, then simmer 30 to 35 minutes until tender and nearly dry.
  4. 4.Remove pork, drain excess liquid, and cool briefly.
  5. 5.Heat enough oil to 180°C. Deep-fry pork 3 to 5 minutes until crisp.
  6. 6.Drain on paper towels, toss with crisp garlic, and serve.
