Pata Tim
Pata Tim is a glossy, slow-braised pork leg dish with saba bananas and tender banana blossoms.

Ingredients for Pata Tim
- 2 small pork legs, cut into 1 1/2-inch pieces
- 4 saba bananas, sliced
- 1 cup banana blossoms
- 3/4 cup soy sauce
- 4 tablespoons hoisin sauce
- 3 1/2 cups pork stock
- 1/4 cup brown sugar
- 1 tablespoon cornstarch, dissolved in 1/2 cup water
- Fish sauce, to taste
- 2 star anise
- 4 bay leaves
- 2 teaspoons peppercorns
- 1 whole garlic, minced
- Peanut oil, as needed
How to cook Pata Tim
- 1.Heat peanut oil in a pot over medium heat and brown garlic.
- 2.Add pork leg and brown all sides.
- 3.Add soy sauce, hoisin sauce, pork stock, brown sugar, cornstarch slurry, fish sauce, star anise, bay leaves, and peppercorns; bring to a boil.
- 4.Lower heat and gently simmer 1 1/2–2 hours, until pork is very tender.
- 5.Add banana blossoms and simmer 15 minutes, then add saba bananas and simmer 15 minutes more.
