The Simplest Paksiw na Galunggong

Paksiw na Galunggong is a clean, tangy vinegar-braised fish dish for warm rice.

  • 1 lb galunggong, cleaned
  • 2 thumb-sized pieces ginger, sliced
  • 1 long green pepper, optional
  • 1/2 cup white vinegar
  • 1 cup water
  • 4 cloves garlic, crushed and chopped
  • Salt, to taste

How to cook The Simplest Paksiw na Galunggong

  1. 1.Rub salt over the fish, including the cavities, and rest for 10 minutes.
  2. 2.Arrange galunggong, ginger, garlic, and green pepper in a pot. Pour in water and vinegar without stirring.
  3. 3.Bring to a boil over medium-high heat. Cover, reduce to low heat, and simmer 30 to 45 minutes until tender.
  4. 4.Add more water if the pot dries out. Adjust salt carefully and serve with warm rice.
