Monok

Monok is a savory shredded mixed-meat dish marinated in vinegar, soy sauce, garlic, onion, and chilies, then pan-fried until browned and crisp-edged.

Ingredients for Monok

  • 1 kg flaked cooked meat, a mix of chicken, pork, and beef
  • 1 large white onion, finely chopped
  • 6 cloves garlic, minced
  • 1 teaspoon brown sugar
  • 1/4 cup oil
  • 1/2 cup cane vinegar
  • 1/4 cup soy sauce
  • 1 chicken bouillon cube, crumbled
  • 1 medium red onion, finely chopped
  • 6 cloves garlic, minced, for marinade
  • 2 red chillies, finely chopped

How to cook Monok

  1. 1.Place the flaked cooked chicken, pork, and beef in a large bowl.
  2. 2.In a separate bowl, mix the cane vinegar, soy sauce, crumbled chicken bouillon cube, red onion, 6 cloves minced garlic, and chopped red chillies until combined.
  3. 3.Pour the marinade over the flaked meat and mix well so the meat is evenly coated. Cover and refrigerate for at least 1 hour; marinate overnight for a stronger flavor if time allows.
  4. 4.Heat the oil in a large pan over medium heat. Add the white onion and the remaining 6 cloves minced garlic, then saute until fragrant and the onion turns translucent.
  5. 5.Add the marinated meat along with its liquid. Stir-fry until the liquid reduces, the meat is heated through, and the strands begin to brown.
  6. 6.Sprinkle in the brown sugar and keep sauteing for a few more minutes, until the edges become lightly crisp and caramelized. Taste and adjust with extra soy sauce or vinegar only if needed, then serve hot with steamed rice.
