Menudo Sulipena
Menudo Sulipena is a slow-braised oxtail stew enriched with chorizo, chickpeas, and tomatoes.

Ingredients for Menudo Sulipena
- 1 1/2 kg oxtails
- 1/2 cup bacon scraps
- 150 g chorizo, sliced
- 1 red bell pepper, cubed
- 1 large carrot, cubed
- 1 can chickpeas, 400 g, drained
- 1 can chopped tomatoes, 400 g
- 1 tbsp tomato paste
- 1 tbsp brandy
- 1 tsp paprika
- 1 tsp dried chili flakes
- 1 whole garlic bulb, pounded
- 1 red onion, finely chopped
- Olive oil, for cooking
- Salt, to taste
- Freshly ground black pepper, to taste
- Water, as needed
How to cook Menudo Sulipena
- 1.Season oxtails with salt and pepper. Brown them on all sides in olive oil in a deep heavy pot; remove.
- 2.Add more oil if needed and sauté garlic and onion. Add bacon scraps and chorizo; cook 2 minutes.
- 3.Stir in tomato paste and cook 30 seconds. Return oxtails with chopped tomatoes, paprika, and chili flakes.
- 4.Add enough water to cover the meat. Bring to a boil, lower heat, cover, and simmer 1 hour 30 minutes.
- 5.Add bell pepper, carrot, chickpeas, and remaining tomato paste; simmer 30 minutes more, until oxtails are fork-tender.
- 6.Season to taste, stir in brandy, and serve.
