Grilled Pork Belly with Garlic Fried Rice and Fried Egg – Liempo Sinangag Itlog

Ingredients for Grilled Pork Belly with Garlic Fried Rice and Fried Egg – Liempo Sinangag Itlog

  • 3 fried eggs
  • 1 lb grilled pork belly
  • 5 tablespoons soy sauce
  • 1 lemon, juiced, or 3 calamansi, juiced
  • 1/4 teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 2–3 cups cooked white rice, preferably cold leftover rice
  • 5 garlic cloves, crushed
  • 3 tablespoons cooking oil
  • 1/4 teaspoon salt

How to cook Grilled Pork Belly with Garlic Fried Rice and Fried Egg – Liempo Sinangag Itlog

  1. 1.Mix soy sauce, lemon or calamansi juice, pepper, and garlic powder; coat pork belly and marinate for at least 3 hours.
  2. 2.Grill pork over medium-high heat for about 3 minutes per side, basting with the marinade mixed with 1 tablespoon oil, until fully cooked; slice bite-size.
  3. 3.Heat remaining oil over medium heat and fry crushed garlic until light brown.
  4. 4.Increase heat to high, add rice and salt, then fold and break apart the rice for 5 minutes until hot and evenly garlicky.
  5. 5.Divide garlic fried rice among plates, top with sliced liempo and one fried egg each, and serve immediately.
