- 3 longanisa
- 2 eggs
- 4 1/2 cups leftover rice
- 1 teaspoon salt
- 1/4 cup butter
- 1/2 cup carrot, diced
- 1/2 cup green peas
- Ground black pepper, to taste
- 12 oz corned beef
- 2 onions, sliced
- 5 garlic cloves, crushed
- 3 tablespoons cooking oil
- 1/4 butternut squash, cubed
- 1/2 cup water
How to cook Longanisa Fried Rice and Ginisang Corned Beef with Kalabasa
- 1.Mix leftover rice with salt. Beat eggs, cook in a lightly oiled pan until set, and cut into small pieces.
- 2.Remove longanisa casings. Cook the meat in oil, breaking it into small pieces as it browns.
- 3.Add salted rice and stir-fry for 3–5 minutes. Add egg, carrot, peas, and pepper; cook 3–5 minutes more.
- 4.In a clean pan, sauté garlic and onions in oil until onions soften. Add corned beef and sauté for 3 minutes.
- 5.Add kalabasa and water. Cover and cook for 5 minutes, until squash is tender.
- 6.Serve the ginisang corned beef alongside longanisa fried rice.
