Crispy Buttered Chicken
Crispy Buttered Chicken coats crunchy fried chicken in a fragrant, lightly sweet garlic-butter sauce.

Ingredients for Crispy Buttered Chicken
- 1 kg chicken nibbles, legs, or thighs
- 1/3 cup fish sauce
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 2 teaspoons black pepper
- 1 1/2 cups flour
- 3/4 cup cornstarch
- 3 eggs
- 1 tablespoon salt
- Oil, for deep-frying
- 150 g good-quality butter, cubed
- 3 garlic cloves, minced
- 2 teaspoons sugar
How to cook Crispy Buttered Chicken
- 1.Whisk eggs and fish sauce. Add chicken, pierce with a fork, cover, and marinate 2–3 hours.
- 2.Mix flour, cornstarch, pepper, garlic powder, onion powder, and salt. Shake chicken pieces in the mixture until evenly coated.
- 3.Heat oil to 180°C. Deep-fry chicken in batches for about 15 minutes, until golden, crisp, and cooked through.
- 4.Melt butter over low heat; cook garlic until fragrant but not browned. Stir in sugar just until dissolved, then turn off heat.
- 5.Drain chicken thoroughly and toss in garlic butter until coated. Serve immediately.
