Sweet & Sour Lychee Shrimps
Juicy prawns and lychees are tossed in a glossy sweet-and-sour sauce with crisp vegetables.

Ingredients for Sweet & Sour Lychee Shrimps
- 500 g large prawns, peeled and deveined
- ½ of a 500 g can lychees, drained and halved
- ½ red capsicum, sliced
- ½ green capsicum, sliced
- 1 small carrot, thinly sliced
- 1 small onion, sliced
- 4 cloves garlic, minced
- 1 tbsp minced ginger
- 2 tbsp cornstarch
- Salt, to taste
- Freshly ground black pepper, to taste
- Oil, for frying
- Chopped spring onions, for garnish
- ¼ cup ketchup or banana ketchup
- 2 tbsp white vinegar
- 3 tbsp sugar
- 1 tbsp soy sauce
- ½ cup water
- 1 tsp cornstarch mixed with 2 tbsp water
How to cook Sweet & Sour Lychee Shrimps
- 1.Season prawns with salt and pepper, then coat lightly with 2 tablespoons cornstarch. Fry in hot oil until pink and lightly crisp; set aside.
- 2.Mix ketchup, vinegar, sugar, soy sauce, and water. Sauté garlic, ginger, and onion in the same pan until fragrant.
- 3.Add capsicums and carrot; cook 2 minutes until slightly tender but crisp. Pour in sauce and bring to a simmer.
- 4.Stir in cornstarch slurry until glossy and thick. Toss in prawns and lychees, simmer 2 minutes, garnish with spring onions, and serve hot.
