Sinigang na Salmon (Salmon Head in Sour Tamarind Soup)
A bright, comforting salmon-head sinigang with tender vegetables and tamarind broth.

Ingredients for Sinigang na Salmon (Salmon Head in Sour Tamarind Soup)
- 1 liter water
- 3 tomatoes, quartered
- 1 medium onion, quartered
- 1 thumb ginger, sliced
- 1 medium white radish, thinly sliced diagonally
- 5 yardlong beans, trimmed and cut into 3-inch pieces
- 1 salmon head, gills removed, cleaned, and halved
- 1 medium eggplant, cut diagonally into 1-inch pieces
- 5 okra
- 3 green chili peppers
- 1 packet tamarind soup mix for 1 liter
- 1 tablespoon fish sauce
- 1 bunch water spinach (kangkong), tough stalk ends trimmed
How to cook Sinigang na Salmon (Salmon Head in Sour Tamarind Soup)
- 1.Bring the water to a boil over high heat.
- 2.Add tomatoes, onion, ginger, radish, and yardlong beans. Cover, reduce to medium heat, and simmer 5 minutes, until radish is halfway tender.
- 3.Add salmon head, eggplant, okra, chilies, tamarind soup mix, and fish sauce. Stir gently and simmer 5 minutes, until fish is cooked.
- 4.Add kangkong and cook just a few seconds. Remove from heat and serve hot with steamed rice.
