Mamon Tostado
Mamon Tostado is a twice-baked Filipino sponge cake with a golden, toasted exterior.

Ingredients for Mamon Tostado
- 2 tbsp oil
- 1 tbsp flour
- 4 large eggs, separated
- 1/2 tsp cream of tartar
- 1/2 cup granulated sugar
- 1/4 cup vegetable oil
- 1/3 cup fresh milk
- 1/2 tsp vanilla extract (optional)
- 1 1/8 cups cake flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup powdered sugar
How to cook Mamon Tostado
- 1.Mix 1 tablespoon flour with 2 tablespoons oil and lightly grease molds. Preheat oven to 350°F (170°C).
- 2.Sift cake flour, powdered sugar, baking powder, and salt. Beat whites foamy, add cream of tartar, then sugar gradually until stiff peaks form.
- 3.Whisk yolks, vegetable oil, milk, and vanilla until frothy. Fold in the sifted mixture in 3 to 4 additions.
- 4.Gently fold meringue into batter in batches, stopping when no white streaks remain. Fill molds over halfway and tap out bubbles.
- 5.Bake 20 to 25 minutes until golden; cool and unmold. Invert cakes overnight, then bake again 20 to 25 minutes until their bodies are golden.
