Mung Bean Soup (Guisadong Monggo)
Guisadong Monggo is a hearty mung bean soup enriched with pork, shrimp, and optional tinapa.

Ingredients for Mung Bean Soup (Guisadong Monggo)
- 1 cup green mung beans
- 1 litre pork or chicken stock
- 300 g pork belly, cubed
- 1 cup shrimp, shelled
- 1/2 cup flaked tinapa (optional)
- 1 bunch spinach or watercress
- 1 whole garlic, minced
- Fish sauce
- Freshly ground black pepper
- Oil
How to cook Mung Bean Soup (Guisadong Monggo)
- 1.Heat oil in a pot over medium heat. Fry garlic until golden; remove and reserve.
- 2.Fry pork belly in the same pot until golden and crisp; remove and reserve.
- 3.Add mung beans and stock. Bring to a boil, then simmer 45 to 60 minutes until beans are very soft; add water if needed.
- 4.Add shrimp, tinapa if using, and pork. Simmer 10 minutes, until shrimp is cooked through.
- 5.Stir in spinach or watercress. Season with fish sauce and black pepper, then garnish with fried garlic.
