Pinakamasarap na Pork Adobo
This rich Pork Adobo finishes with crisp garlic chips and a deeply reduced savory sauce.

Ingredients for Pinakamasarap na Pork Adobo
- 2 lb pork shoulder, cubed
- 4 bay leaves
- 1/2 cup soy sauce
- 1/2 cup white vinegar
- 7 1/2 oz lemon-lime soda
- 2 tbsp oyster sauce
- 2 tsp crushed peppercorns
- 2 heads garlic, thinly sliced
- 1 onion, sliced
- 1/4 cup cooking oil
How to cook Pinakamasarap na Pork Adobo
- 1.Heat the oil over low heat; fry garlic, stirring occasionally, until golden and crisp. Drain, reserving the garlic-infused oil.
- 2.Heat 3 tablespoons reserved oil in the pan over medium-low heat. Cook onion until caramelized, then brown pork on all sides.
- 3.Add soy sauce, vinegar, soda, oyster sauce, peppercorns, bay leaves, and half the garlic chips. Bring to a boil.
- 4.Cover and simmer over low heat for 1 hour, until pork is tender. Uncover and cook until the sauce has evaporated.
- 5.Serve with rice and scatter the remaining garlic chips over the Pork Adobo.
