Tokwa at Baboy
Tokwa at Baboy combines tender pork and crisp tofu in a sharp vinegar-soy dressing.

Ingredients for Tokwa at Baboy
- 600 g pork ears, pork belly, or a mixture of both
- 2 blocks firm tofu
- 2 large white onions, chopped
- 1 cup cane vinegar
- 1/2 cup soy sauce
- 1/4 cup water
- Freshly ground black pepper, to taste
- 4 tsp brown sugar
- Chopped red chilies
- Salt, to taste
- Water, for steaming
- Oil, for frying
How to cook Tokwa at Baboy
- 1.Rub pork with salt, black pepper, and oil. Marinate for 30 minutes.
- 2.Steam pork for 45 minutes or until tender and sticky. Cool slightly, then cut into bite-sized pieces.
- 3.Fry tofu in enough oil until golden and crisp. Cool, then cut into cubes.
- 4.Mix vinegar, onions, soy sauce, water, brown sugar, and black pepper until sugar dissolves.
- 5.Combine pork and tofu in a serving dish, pour over dressing, top with red chilies, and serve immediately.
