Tinuom na Manok
Tinuom na Manok steams chicken in fragrant banana-leaf parcels with a warming savory broth.

Ingredients for Tinuom na Manok
- 8 chicken thighs
- 2 red onions, sliced
- 2 tomatoes, quartered
- 8 slices ginger
- 8 lemongrass stalks
- Salt, to taste
- Freshly ground black pepper, to taste
- Banana leaves
- Kitchen twine
- 1 1/2 cups chicken stock
- 1 1/2 cups water
- 2 tablespoons fish sauce
- 2 white onions, quartered
How to cook Tinuom na Manok
- 1.Lay a ginger slice on each banana leaf, top with chicken, red onion, tomato, and lemongrass, then season with salt and pepper.
- 2.Fold leaves into secure parcels and tie with kitchen twine.
- 3.Place parcels in a deep pot with chicken stock, water, fish sauce, and white onions; bring slowly to a boil.
- 4.Lower to a simmer and cook 1 hour, until chicken is tender and fully cooked.
- 5.Place a parcel in each bowl, open carefully, and ladle over hot broth.
