Copycat Savory Chicken
Copycat Savory Chicken is soy-marinated roast chicken with crisp skin and a lightly spiced peanut gravy.

Ingredients for Copycat Savory Chicken
- 1 whole chicken, dressed and cleaned
- 1 bunch lemongrass, pounded
- 2 tbsp sesame oil
- Peanut oil, for frying
- 1 bundle lemongrass, roughly chopped
- 4 spring onions, roughly chopped
- 1 whole garlic, peeled
- 1 1/2 cups soy sauce
- 1/2 cup water
- 1 tbsp fish sauce
- 1 tsp ground white pepper
- 1 tsp Chinese five-spice powder
- 3 bay leaves
- 2 cups chicken stock
- 4 tbsp peanut oil
- 1/2 cup flour
- 2 tbsp unsweetened peanut butter
- 1 pinch Chinese five-spice powder
- Salt, to taste
- Freshly ground black pepper, to taste
How to cook Copycat Savory Chicken
- 1.Pulse roughly chopped lemongrass, spring onions, garlic, soy sauce, water, fish sauce, white pepper, and five-spice; rest 30 minutes, then strain.
- 2.Marinate chicken with strained mixture, pounded lemongrass, and bay leaves overnight in the refrigerator.
- 3.Bring chicken to room temperature for 1 hour; drain, then combine reserved marinade with sesame oil for basting.
- 4.Roast at 220°C for 1 1/2 hours, basting every 15 minutes, until juices run clear between leg and thigh.
- 5.For gravy, cook peanut oil and flour over low heat until light brown; whisk in stock, peanut butter, five-spice, salt, and pepper until thick.
- 6.Heat peanut oil to 180°C; carefully pour over roasted chicken skin, then serve chicken hot with gravy.
