Pancit Puti
Pancit Puti is a light, fragrant bihon stir-fry finished with chicharon and crisp garlic.

Ingredients for Pancit Puti
- 400 g rice noodles (bihon), soaked 15 minutes and drained
- 1 large chicken leg-and-thigh section, pre-boiled and flaked
- 2 cups concentrated chicken stock
- 6 cloves garlic, minced
- 2 shallots, minced
- 3 stalks spring onions, chopped
- 2 tbsp sesame oil
- 2 tbsp fish sauce
- 2 cups crumbled chicharon, for garnish
- Crispy fried garlic, for garnish
- White pepper, to taste
- Lemon, for serving
- Oil, for cooking
How to cook Pancit Puti
- 1.Heat oil in a large wok over medium heat and sauté minced garlic and shallots until the shallots soften.
- 2.Increase heat to very high. Add bihon and flaked chicken, stir-frying continuously while adding stock 1/2 cup at a time.
- 3.Add spring onions, sesame oil, fish sauce, and white pepper; stir-fry for 1 minute until noodles are tender.
- 4.Transfer to a platter, cover generously with crispy garlic and chicharon, and serve with lemon.
