Ginataang Mackerel
Ginataang Mackerel is a quick canned-fish coconut stew with spinach and ginger.

Ingredients for Ginataang Mackerel
- 30 oz mackerel, canned in brine
- 1 bunch spinach
- 2 cups coconut milk
- 5 Thai chili peppers, optional
- 3 thumb-sized pieces ginger, cut into thin strips
- 1 onion, chopped
- 5 cloves garlic, minced
- 1/2 cup water
- 1/4 cup white vinegar
- 3 tbsp cooking oil
- Fish sauce, to taste
- Ground black pepper, to taste
How to cook Ginataang Mackerel
- 1.Heat oil in a pot over medium heat. Sauté onion, garlic, and ginger until the onion softens and garlic is lightly browned.
- 2.Add coconut milk and chili peppers. Stir, cover, and cook gently for 5 minutes.
- 3.Add mackerel with its brine, water, and vinegar. Bring to a boil, then cover and cook for 5 to 7 minutes.
- 4.Season with fish sauce and black pepper. Add spinach and cook for 1 minute, just until wilted, then serve.
