Ginataang Langka, Monggo at Malunggay
Ginataang Langka, Monggo at Malunggay is a hearty coconut stew with pork, shrimp, and jackfruit.

Ingredients for Ginataang Langka, Monggo at Malunggay
- 1 cup green mung beans
- 400 g canned young jackfruit (langka), drained
- 1/2 cup malunggay leaves
- 1/4 cup dried small shrimp (kalcag)
- 200 g pork belly, sliced
- 400 ml coconut milk
- 500 ml pork or chicken stock
- 2 shallots, chopped
- 1 whole garlic bulb, minced
- Fish sauce, to taste
- Salt, to taste
- Oil
How to cook Ginataang Langka, Monggo at Malunggay
- 1.Heat oil over medium heat, season pork with salt, and brown it on all sides.
- 2.Add stock and mung beans; bring to a boil, then simmer until beans are tender but not mushy.
- 3.In another pot, heat oil and sauté shallots and garlic until fragrant. Add kalcag for 2 minutes.
- 4.Add langka and cook for 5 minutes, then add the pork, monggo, and stock.
- 5.Add coconut milk and simmer gently on low for 30 minutes. Add malunggay, cook 5 minutes, and season with fish sauce.
