Adobong Baboy with Boiled Eggs is a glossy soy-vinegar pork stew enriched with tender eggs.

Ingredients for Adobong Baboy with Boiled Eggs
- 2 lbs pork, cut into 2-inch cubes
- 6 boiled eggs, peeled
- 9 tbsp soy sauce, divided
- 3 tbsp white vinegar
- 1 1/2 cups water
- 1 tbsp oyster sauce
- 1 tbsp dry sherry
- 6 cloves garlic, crushed
- 2 tbsp granulated white sugar
- 4 dried bay leaves
- 2 tsp whole peppercorns
- 3 tbsp cooking oil
How to cook Adobong Baboy with Boiled Eggs
- 1.Toss pork with 4 tablespoons soy sauce and marinate for 1 hour.
- 2.Heat oil in a wide pot. Cook garlic, peppercorns, and bay leaves until garlic is light golden brown.
- 3.Add pork, its marinade, and sherry; cook for about 5 minutes.
- 4.Add remaining soy sauce, oyster sauce, and water. Bring to a boil, then simmer for about 40 minutes.
- 5.Add vinegar and allow the stew to return to a boil before stirring in sugar.
- 6.Add peeled boiled eggs and cook 2 to 3 minutes. Serve with warm rice.
