Pinaputok na Isda
Pinaputok na Isda is charcoal-grilled fish stuffed with a fresh tomato and ginger filling.

Ingredients for Pinaputok na Isda
- 1 medium tilapia, black snapper, or other grilling fish, scaled
- 1 large tomato, chopped and deseeded
- 1 onion, chopped
- 1/2-inch ginger, finely chopped
- Juice of 1 lemon
- Freshly ground black pepper, to taste
- Salt, to taste
- Oil, as needed
- 3 tbsp soy sauce
How to cook Pinaputok na Isda
- 1.Score the fish 3 to 4 times on each side. Season the cavity, exterior, and cuts with salt and pepper; rest 15 minutes.
- 2.Mix tomato, onion, ginger, juice of 1/2 lemon, salt, and pepper. Pack the mixture into the fish cavity.
- 3.Rub fish with oil and grill over charcoal, turning as needed, until cooked through and lightly charred on both sides.
- 4.Mix soy sauce with remaining lemon juice for dipping. Serve the grilled fish with the dip.
