Halaan Bopis
Halaan Bopis gives chopped clam meat a spicy, sour, aromatic sauté treatment.

Ingredients for Halaan Bopis
- Oil, for cooking
- 8 cloves garlic, minced
- 1 large red onion, minced
- 800 g steamed clam meat, finely chopped
- 3 red chillies, finely chopped
- 4 bay leaves
- 1 large red capsicum, finely diced
- 2 cups cane vinegar, divided
- 1 cup clam stock
- 2 stalks lemongrass, bruised
- 1 knot pandan leaves
- 1 tablespoon annatto powder, dissolved in 3 tablespoons stock
- Fish sauce, to taste
- Freshly ground black pepper, to taste
- Salt, to taste
How to cook Halaan Bopis
- 1.Heat oil over medium heat and sauté garlic and onion until fragrant and translucent.
- 2.Add clam meat, chillies, and bay leaves; stir-fry for about 3 minutes.
- 3.Add capsicum, 1 cup vinegar, clam stock, bruised lemongrass, and pandan. Bring to a boil over high heat until the sauce thickens.
- 4.Add more vinegar to taste, then stir in dissolved annatto powder.
- 5.Season with fish sauce, pepper, and salt. Simmer 2 minutes, discard lemongrass and pandan, and serve hot.
