Ginisang Gulay
Ginisang Gulay is a quick vegetable sauté that keeps ampalaya and garden vegetables tender-crisp.

Ingredients for Ginisang Gulay
- 1 medium bitter gourd (ampalaya), cored and sliced
- 6 to 8 okra
- 1 cup sliced tomatoes
- 8 string beans, cut into 2-inch pieces
- 1 Chinese eggplant
- 3/4 cup vegetable broth
- 1 medium yellow onion, sliced
- 1 1/2 cups cubed calabaza squash
- 4 cloves garlic, crushed
- Salt and ground black pepper, to taste
- 3 tablespoons cooking oil
How to cook Ginisang Gulay
- 1.Heat oil over medium heat and sauté garlic and onion until the onion softens.
- 2.Add tomatoes and cook 2 minutes until they begin to break down.
- 3.Add calabaza squash, stir, and cook 2 minutes.
- 4.Add eggplant, okra, string beans, and ampalaya; stir-fry for 3 minutes.
- 5.Pour in vegetable broth, cover, and cook 5 to 7 minutes until vegetables are tender.
- 6.Uncover, season with salt and pepper, and serve.
