This airy steamed puto cake is topped with salty egg and melted cheese.

Ingredients for Puto Cake
1 1/2 cups cake flour
2 teaspoons baking powder
1/2 cup granulated white sugar, divided
2/3 cup fresh milk, plus more as needed
4 medium egg whites
1 teaspoon cream of tartar, optional
2 salted eggs, thinly sliced
1/2 cup grated cheese
How to cook Puto Cake
1.Line an 8- or 9-inch removable-bottom pan with parchment. Sift flour, baking powder, and 1/4 cup sugar together.
2.Beat egg whites until bubbly; add cream of tartar if using, gradually beat in remaining sugar, then beat to medium-firm peaks.
3.Mix milk into dry ingredients to a pancake-like batter. Whisk in one-quarter of meringue, then gently fold in the rest in batches.
4.Pour into pan, add half the cheese, and steam over a very gentle simmer on very low heat for 10 minutes. Add remaining cheese and salted egg; steam 5 to 10 minutes until a toothpick is clean.
