Carioca
Chewy fried rice balls coated in sticky caramel syrup.

Ingredients for Carioca
- 1 cup glutinous rice flour
- 1/2 cup water, plus more if needed
- Oil, for frying
- 1 cup sugar
- 1/4 cup water, for the syrup
How to cook Carioca
- 1.Combine the glutinous rice flour and 1/2 cup water until a soft but shapeable dough forms.
- 2.Scoop out 1 tablespoon portions of dough, roll into balls, and poke a small hole in each.
- 3.Heat oil over medium heat. Fry the balls in batches, turning them, until pale golden and doubled in size.
- 4.Drain the carioca on paper towels.
- 5.In a saucepan, dissolve the sugar in 1/4 cup water and cook over medium-low heat until bubbling.
- 6.Turn off the heat, toss in the carioca until coated in syrup, thread onto bamboo sticks, and serve.
