Pininat is a rich baked kakanin with coconut milk, macapuno, and milks folded into a chewy rice-flour batter.

Ingredients for Pininat
400 g glutinous rice flour
400 ml coconut milk
400 ml condensed milk
400 ml evaporated milk
1/3 cup butter, melted
4 eggs
1 jar macapuno
1 tablespoon vanilla extract
1/2 teaspoon salt
How to cook Pininat
1.Preheat the oven to 180 C and line a large baking tray with banana leaves.
2.In a large bowl, combine the coconut milk, condensed milk, evaporated milk, melted butter, eggs, macapuno, vanilla extract, and salt. Mix on medium speed until smooth and even.
3.Add the glutinous rice flour gradually, mixing after each addition until the batter is fully combined and free of dry pockets.
4.Pour the batter into the prepared tray and spread it level.
5.Bake for 45 to 50 minutes, until the top is golden brown and the center is set. Cool before slicing and serving.
