Masi
Masi are chewy black-and-white glutinous rice balls with a sweet roasted peanut filling.

Ingredients for Masi
- 1 1/2 cups white glutinous rice flour (malagkit)
- 1/2 cup black glutinous rice flour (pirurutong or tapol)
- 1 cup water
- Pinch of salt, optional
- 1/2 cup roasted peanuts, finely crushed
- 1/2 cup brown sugar or muscovado
- Banana leaves or parchment paper squares, optional
How to cook Masi
- 1.Combine crushed peanuts and brown sugar or muscovado for the filling.
- 2.Mix white and black glutinous rice flours with salt. Gradually add water until a smooth, pliable dough forms.
- 3.Flatten 2 to 3 tbsp dough into a disc. Add 1 tsp filling, seal the edges, and roll into a smooth ball.
- 4.Boil water, add the balls gently, and stir lightly to prevent sticking. Cook until floating for 1 to 2 minutes.
- 5.Lift out with a slotted spoon and serve warm, plain or wrapped in banana leaves or parchment.
