Sinamak
Sinamak is a sharp, spicy Filipino vinegar condiment that becomes more potent as it rests.

Ingredients for Sinamak
- 2 to 3 cups white, cane, or coconut vinegar
- 1 cup bird’s eye or Thai chilies, fresh or dried
- 3 tbsp ginger, sliced
- 1 head garlic
- 3 tsp whole peppercorns
- 1 medium white onion
How to cook Sinamak
- 1.Place chilies, ginger, garlic, peppercorns, and onion in a clean, dry bottle or jar.
- 2.Shake the container to distribute the aromatics evenly.
- 3.Pour in enough vinegar to cover the ingredients, then seal tightly.
- 4.Shake lightly and store for at least 3 days before serving; steep longer for a hotter sinamak.
- 5.Serve as a condiment with fried or grilled foods.
