Taisan

Taisan is a light Filipino chiffon loaf with a tender crumb and buttery finish.

Ingredients for Taisan

  • 1/2 teaspoon cream of tartar
  • 1 1/4 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup sugar
  • 4 egg yolks
  • 6 egg whites
  • 1 teaspoon vanilla extract
  • 1/4 cup evaporated milk
  • 1/4 cup flavorless oil
  • 2 tablespoons water
  • Melted butter, for brushing

How to cook Taisan

  1. 1.Heat the oven to 160°C (320°F) and grease two 9 x 5-inch loaf pans.
  2. 2.Sift flour, baking powder, and salt together.
  3. 3.Beat egg whites with cream of tartar on high speed; gradually add sugar and beat to medium peaks.
  4. 4.Whisk yolks, vanilla, evaporated milk, oil, and water; gently mix into the dry ingredients until smooth.
  5. 5.Fold the meringue into the batter, divide between pans, and bake 25 to 30 minutes until a tester comes out clean.
  6. 6.Cool the loaves, then brush their tops with melted butter before serving.
