Lauya de Palanyag
Lauya de Palanyag is a rich, annatto-tinted meat soup with saba, squash, and sweet potato.

Ingredients for Lauya de Palanyag
- 750 grams beef shanks
- 750 grams pork leg and/or pork bones
- 1 small head cabbage, chopped
- 3 saba bananas, sliced
- 1/2 butternut squash, cubed
- 2 medium sweet potatoes, cubed
- 2 small bunches chives, tied into knots
- 2 large white onions, chopped
- 2 tablespoons annatto seeds, soaked in 1/4 cup water
- 2 tablespoons palm sugar
- Salt
- Freshly ground black pepper
- Water
How to cook Lauya de Palanyag
- 1.Combine beef shanks, pork, onions, and enough water to cover in a large pot. Bring to a boil and skim off scum.
- 2.Lower to a simmer and cook 1 1/2 to 2 hours, until meat is tender and broth is flavorful.
- 3.Add saba, squash, sweet potatoes, and annatto seeds with their soaking water.
- 4.Simmer 10 to 15 minutes until vegetables are cooked but still firm.
- 5.Add cabbage, chives, and palm sugar. Season with salt and pepper, then simmer 5 minutes.
- 6.Serve hot in bowls.
