Piaya
Piaya is a simple pan-cooked pastry with a warm, molten muscovado sugar center.

Ingredients for Piaya
- 1 cup flour, plus extra for dusting
- 12 teaspoons muscovado sugar
- 1/2 teaspoon salt
- 3 tablespoons cold butter, cubed
- 5 tablespoons ice water
- Oil, for pan-cooking
How to cook Piaya
- 1.Process flour, salt, and cold butter until the mixture resembles coarse crumbs.
- 2.Add ice water and process until dough clumps. Transfer to a floured surface, knead gently, and divide into 6 pieces.
- 3.Flatten each portion, place 2 teaspoons muscovado sugar in the center, seal like a dumpling, and roll into a 4-inch circle.
- 4.Cook in a lightly oiled pan until golden brown on both sides. Serve whole or sliced.
