Fish in Mushroom Cream Sauce
Golden dory fillets are finished in a silky mushroom cream sauce.

Ingredients for Fish in Mushroom Cream Sauce
- 6 medium dory fillets
- Juice of 1 lemon
- 1/2 cup flour
- 1/2 cup cornstarch
- 200 g white button mushrooms, sliced
- 1 1/2 cups milk
- 3 tbsp flour
- 100 g butter
- 2 small shallots, finely chopped
- 2 cloves garlic, minced
- 1/2 tsp nutmeg
- Salt, to taste
- Freshly ground black pepper, to taste
- Oil
How to cook Fish in Mushroom Cream Sauce
- 1.Mix 1/2 cup flour, cornstarch, salt, and pepper. Season fish with lemon juice, salt, and pepper; rest for 15 minutes.
- 2.Dredge fish lightly in the flour mixture and pan-fry in oil until golden on both sides; set aside.
- 3.Cook mushrooms in a little oil for 1 minute; remove. Melt butter and sauté garlic and shallots.
- 4.Stir in 3 tbsp flour and cook into a roux. Gradually whisk in milk until smooth and thick.
- 5.Add nutmeg and mushrooms; simmer 1 minute. Add fish, simmer 1 minute more, and adjust seasoning.
