Corned Beef Sinigang
Corned Beef Sinigang is a tangy tamarind soup with tender beef and gently cooked vegetables.

Ingredients for Corned Beef Sinigang
- 1.5 lbs corned beef, cut into serving pieces
- 6 cups water
- 1 medium red onion, quartered
- 5 tomatoes, quartered
- 2 medium taro, peeled and cut into 2-inch chunks
- 1 medium radish, peeled and sliced
- 1 medium eggplant, sliced
- 8 small okra, ends trimmed
- 3 green chilies
- Tamarind paste or tamarind powder, to taste
- Fish sauce or salt, to taste
How to cook Corned Beef Sinigang
- 1.Simmer corned beef and water in a covered pot for 1 to 1 1/2 hours, until fork-tender. Alternatively, pressure-cook on high for 40 minutes.
- 2.Add tomatoes, onion, and taro; cook about 5 minutes.
- 3.Add radish and eggplant; cook about 3 minutes, until radish starts to soften. Add okra and green chilies.
- 4.Stir in tamarind paste or powder to your preferred sourness. Season with fish sauce or salt.
- 5.Turn off the heat once vegetables reach your preferred tenderness, then serve hot with rice.
