Beef Kare-Kare
Beef Kare-Kare pairs tender beef with a nutty, annatto-tinted sauce and crisp blanched vegetables.

Ingredients for Beef Kare-Kare
- 2 lbs beef chuck, cubed
- 1 bunch string beans, cut into 2-inch lengths
- 1 bunch bok choy, trimmed
- 1 Chinese eggplant, sliced
- 1 1/2 cups ground roasted peanuts
- 1 to 2 tbsp annatto powder
- 2 tbsp glutinous rice powder
- 1 large yellow onion, chopped
- 2 tsp minced garlic
- 4 tbsp cooking oil
- 2 to 3 tbsp fish sauce
- 4 cups beef broth
- 1/8 tsp ground black pepper
- 1/2 cup water
How to cook Beef Kare-Kare
- 1.Heat oil and sauté onion until soft, then add garlic. Season with black pepper and brown the beef lightly.
- 2.Stir in ground peanuts and cook for 2 minutes. Add beef broth, boil, cover, and simmer 60 to 90 minutes until tender.
- 3.Blanch string beans for 2 minutes, then chill in ice water. Blanch eggplant and bok choy in batches the same way.
- 4.Mix annatto powder, water, and glutinous rice powder. Add to tender beef with fish sauce and cook over medium 3 to 5 minutes until thick.
- 5.Transfer to a bowl and arrange vegetables alongside. Serve with warm rice and bagoong alamang, if desired.
