Vigan Empanada is a crisp orange rice-flour turnover filled with longaniza, green papaya, and egg.

Ingredients for Vigan Empanada
2 cups rice flour
1/2 cup water
1/2 tsp salt
1/4 cup annatto oil
1 green unripe papaya, grated
6 Vigan-style longaniza, casings removed
2 stalks spring onion, chopped
6 fresh eggs
Salt, to taste
Freshly ground black pepper, to taste
Oil, for deep-frying
Wax paper or baking paper
How to cook Vigan Empanada
1.Knead rice flour, water, 1/2 tsp salt, and annatto oil until smooth. Divide into six balls.
2.Sandwich one dough ball between two large squares of wax paper and press into a thin round.
3.Place one longaniza portion and grated green papaya in the center. Crack in one egg, add spring onion, season with salt and pepper, then fold and seal.
4.Deep-fry immediately in 160°C oil for about 4 minutes per side, until crisp. Drain on paper towels and serve hot.
