Spicy Laing
Spicy Laing slowly cooks dried taro leaves in rich coconut milk with pork and daing.

Ingredients for Spicy Laing
- 1 package (4 ounces) dried taro leaves
- 1/2 pound pork belly, thinly sliced
- 3/4 cup shredded salted dried fish (daing)
- 2 cups coconut milk
- 4 cups coconut cream
- 15 Thai chilies
- 1 medium onion, sliced
- 5 cloves garlic, crushed
- 2 tablespoons ginger, cut into strips
- 2 long green chilies
- Salt and pepper, to taste
How to cook Spicy Laing
- 1.Combine pork, daing, garlic, onion, ginger, coconut milk, and coconut cream in a pot over medium heat.
- 2.Bring to a boil, then lay in the dried taro leaves and Thai chilies without stirring.
- 3.Simmer gently for 40 to 50 minutes, until the liquid is nearly reduced and the coconut smells deeply fragrant.
- 4.Add long green chilies, salt, and pepper; gently stir and cook for 3 more minutes.
- 5.Transfer to a serving dish and serve hot.
