Guisadong Ampalaya

A simple sauté of bitter melon, tomatoes, and soft eggs that makes a quick Filipino vegetable dish for rice.

Ingredients for Guisadong Ampalaya

  • 2 medium ampalaya (bitter melon), halved, seeded, and thinly sliced
  • 2 tomatoes, chopped
  • 1 small onion, sliced
  • 3 garlic cloves, minced
  • 3 eggs, lightly beaten
  • 1 tbsp neutral oil
  • 2 tbsp water
  • Salt and black pepper, to taste

How to cook Guisadong Ampalaya

  1. 1.Slice the ampalaya thinly and remove all seeds and white pith. Rinse and drain well.
  2. 2.Heat oil in a pan over medium heat. Cook the onion and garlic until softened, then add the tomatoes and cook until they release their juices.
  3. 3.Add the ampalaya and water. Cover and cook for 3 to 5 minutes, until just tender.
  4. 4.Pour in the beaten eggs and let them set briefly before gently folding them through the vegetables. Season with salt and pepper and serve immediately.
